This easy oven roasted eggplants is perfect for any luncheon, or dinner. It’s perfect as a side with nearly any main and in wraps, and salads, or tossed with pasta.

When you drizzle the slices with olive oil and season them correctly, they get caramelized in the oven and they are irresistible!

  • Eggplants
  • Salt
  • Oregano

How to Make Oven Roasted Eggplant

Preheat the oven to 400 degrees F.

Wash and slice the eggplant in half.

Slice the inner side of the eggplant halves across on a diagonal one way, then slice across the eggplant in the opposite direction, making a diamond pattern as shown in the photo below.

Arrange eggplant on a baking sheet. Then drizzle them with olive oil and season them with salt, garlic powder, and oregano.

Then it’s time to roast that eggplant up!

I like to cook them until they are golden and start to caramelize a bit. It will take about 35-40 minutes.

How to Store Eggplant

You can store roasted eggplant in the refrigerator for 2-3 days. Let them cool after roasting them, then place them in layers in a container.

Freezing: Because eggplants tend to lose their shape when exposed to cold temperatures, I don’t recommend freezing them.
