Oven Roasted Eggplant

This easy oven-roasted eggplant recipe is one of the perfect healthy addition to just about any meal.

Ingredients
  

  • 2 eggplants
  • 4 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp oregano

Method
 

  1. Preheat the oven to 400 degrees F.
  2. Wash and slice the eggplant in half.
  3. Slice the inner side of the eggplant halves across on a diagonal one way, then slice a cross the eggplant in the opposite direction, making a diamond pattern as shown in the photo below.
  4. Arrange eggplant on a baking sheet.
  5. Then drizzle them with olive oil and season them with salt, garlic powder, and oregano.
  6. Then it's time to roast that eggplant up! It will take about 35-40 minutes.
