How to Make Oven Roasted Eggplant
Preheat the oven to 400 degrees F.
Wash and slice the eggplant in half.
Slice the inner side of the eggplant halves across on a diagonal one way, then slice across the eggplant in the opposite direction, making a diamond pattern as shown in the photo below.
Arrange eggplant on a baking sheet. Then drizzle them with olive oil and season them with salt, garlic powder, and oregano.
Then it’s time to roast that eggplant up!
I like to cook them until they are golden and start to caramelize a bit. It will take about 35-40 minutes.

How to Store Eggplant
You can store roasted eggplant in the refrigerator for 2-3 days. Let them cool after roasting them, then place them in layers in a container.
Freezing: Because eggplants tend to lose their shape when exposed to cold temperatures, I don’t recommend freezing them.
