  • Feta cheese
  • Arugula
  • Pine nuts
  • For the dressing
  • Balsamic vinegar

How To Make Beet Salad

Beets can be boiled or baked. I prefer to bake it in the oven. In this form, it will retain much more vitamins and nutrients than in boiled. 

  1. Wash the beets dry with a paper towel.

2. Wrap each beetroot individually in foil and bake in a preheated oven at 410F for 1 hour.

3. Cool the cooked beets.

4. Peel the beets  

5. Cut beets and feta cheese into cubes. Then chop the green onion. In a separate bowl, mix all the ingredients for the dressing.

6. Put the arugula, beets, green onion and feta cheese in a serving bowl.

7. Sprinkle pine nuts on top. Drizzle with dressing. I like to sprinkle my salad with generous pinches of oregano.

  • 1 tbsp Honey
