Keto Beet Salad with Feta Cheese

Let's make a simple, easy, healthy salad of roasted beets and feta cheese. Bright and tasty, it can decorate both a festive and everyday table.

For the salad
- 3 medium Beets
- 3/4 cup Feta cheese
- 1 cup Arugula lightly packed
- 1/4 Green onion
- 2 tbsp Pine nuts toasted, choppedĀ
For the dressing
- 1 tbsp Balsamic vinegar
- 1/8 tbsp Dijon mustard
- 1/4 tbsp Salt
- 2 tbsp Extra virgin olive oil
- 1 tbsp Honey
Wash the beets dry with a paper towel.
Wrap each beetroot individually in foil andbake in a preheated oven at 410F for 1 hour.
Cool the cooked beets. Peel the beets.
Cut beets and feta cheese into cubes. Then chopthe green onion.
In a separate bowl, mix all the ingredients forthe dressing.
Put the arugula, beets, greenonion, and feta cheese in a serving bowl. Sprinkle pine nuts on top. Drizzlewith dressing.
