This Meatball Soup is so light, fresh, and delicious, made with aromatic vegetables, rice, and the most tender meatballs.
Meatball soup is a classic in my home. Everybody just loves to eat this delicious soup.
Ingredients to Make Meatball Soup
For the meatballs:
- Ground Meat: I like to use a combination of pork and ground beef. Feel free to use ground turkey, ground chicken, or ground lamb.
- Eggs: Eggs help hold the meatballs together and keep them nice, tender, and juicy.
- Onion: onion intensifies the mouthwatering savory flavor. Shallots also work.
- Minced parsley for flavor.
- Breadcrumbs
- Salt and Black Pepper
For the soup, You’ll need:
- Olive oil or oil avocado.
- Homemade Chicken Broth: It is essential to use a quality chicken broth here as we’ll be using it for the meatball soup broth, so you want it to be delicious.
- Potatoes
- Carrots
- Onion
- Rice
How to Make Soup
Make meatballs. Place all meatball ingredients in a mixing bowl and mix well with your hands.
Then, roll the meat into 1-inch balls.
Heat oil over medium heat in a pan. Brown the meatballs for 2-3 minutes. The inside of meatballs will finish cooking in the soup. Remove the meatballs and set them aside.
Cook vegetables. Heat oil over medium heat in a pot, and then add the onions, carrots, and potatoes. Cover and let the veggies sweat, stirring occasionally for 5 minutes.
Add the chicken broth and water. Bring to a boil, and simmer for 15 minutes. Then add the meatballs and rice.
Cook until rice is cooked through, refer to package for cooking time. Transfer to serving bowls. Garnish with the fresh parsley.
This meatball soup is best-served piping hot with a piece of crusty bread on the side for dipping.
Tips
Can be used frozen meatballs instead of making your own.
Store this meatball soup in the fridge for 2- 3 days.
