Make Meatballs
- Place all meatball ingredients in a mixing bowl and mix well with your hands. Then, roll the meat into 1-inch balls.
- Heat olive oil over medium heat in a pan. Brown the meatballs for 2-3 minutes.The inside of meatballs will finish cooking in the soup.
- Remove the meatballs and set them aside.
Cook Soup
- Heat olive oil over medium heat in a large pot, and then add the onions, carrots, and potatoes. Cover and let the veggies sweat, stirring occasionally for 5 minutes.
- Add the chicken broth and water. Bring to a boil, and simmer for 15 minutes.
- Add the meatballs and rice. Cook until rice is cooked through, refer to package for cooking time.
- Transfer to serving bowls. Garnish with the fresh parsley.
