Ingredients to Make Keto Zucchini Fritters

Zucchini: Zucchini is easy to find in markets and provides micronutrients, such as vitamins C and B6. This versatile vegetable is low in calories and makes a great addition to most healthy diets.

Almond Flour:  The almond flour gives the fritters a fabulous texture without adding many carbs.

Salt: This is an important ingredient. It helps the zucchini release excess moisture, so they come out super crispy and not soggy.

Eggs: The eggs help to bind the fritters, so they do not fall apart while cooking.

Vegetable oil: The vegetable oil is needed to give the zucchini fritters that amazing crispy exterior. Feel free to use butter or your favorite vegetable oil.

How to Make Zucchini Fritters

Grate the zucchini. Use a grater to shred the zucchini. Then sprinkle with salt and let sit for 10-15 minutes.

Strain excess moisture from zucchini using a cheesecloth or a thin dishtowel.

In a large bowl, combine grated zucchini, almond flour, eggs, and black pepper. Stir until well combined. 

Then heat a large non-stick pan over medium-low heat. Add vegetable oil to the non-stick pan. 

After that use about 2 tablespoons of batter for each fritter and spread into a 3-inch circle. Cook until browned and repeat with remaining zucchini fritters.
