Ingredients
  

  • 2 zucchini
  • ¼ cup almond flour
  • 2 eggs
  • 1 tsp salt
  • 5 tbsp vegetable oil
  • ¼ tsp pepper

Method
 

  1. Grate the zucchini. Use a grater to shred the zucchini.
  2. Sprinkle with salt and let sit for 10-15 minutes.
  3. Strain excess moisture from zucchini using a cheesecloth or a thin dishtowel.
  4. In a large bowl, combine grated zucchini, almond flour, eggs, and black pepper. Stir until well combined. 
  5. Then heat a large non-stick pan over medium-low heat. Add vegetable oil to the non-stick pan. 
  6. After that use about 2 tablespoons of batter for each fritter and spread into a 3-inch circle. Cook until browned and repeat with remaining zucchini fritters.
  7. Serve these keto gluten-free fritters with sour cream or your favorite homemade dipping sauce!
