How to Make Breakfast Taco Casserole
To prepare this dish, start by preheating the oven to 350°F and spraying a baking pan with non-stick spray.
In a large bowl, mix together eggs and milk, then season with salt and pepper.
Next, chop the tomatoes and bacon.
Line the bottom of the prepared baking pan with flour tortilla. Top the tortilla with 1/4 of the chopped tomatoes, 1/4 of bacon, and 1/4 of mozzarella cheese. Pour egg mixture over the tortilla. Repeat these layers two more times.
Bake uncovered for 25-30 minutes in the preheated oven.
After baking, top it off with remaining cheese and broil until melted for about 2 minutes.
