Some of my favorite breakfast meals are crepes, and this High-Protein Cottage Cheese recipe is the absolute best! I love how easy they are to throw into a blender, creating a silky-smooth batter that makes the crepes melt-in-your-mouth tender. They are just as versatile as classic crepes, so you can dress them up with yogurt or your favorite toppings. I always make a big batch on the weekend so we have a healthy, protein-packed breakfast ready to go during the busy week.

These high-protein cottage cheese crepes are a wholesome twist on a well-loved breakfast food enjoyed by many around the world. They are incredibly versatile and can be served with a variety of toppings, from a dollop of yogurt and fresh berries to concentrated milk or Nutella. Because the cottage cheese is blended straight into the batter, they stay soft and delicious whether you eat them hot or cold, making them fantastic leftovers for the busy week ahead.
The first few crepes you make might not turn out perfectly. But don’t worry, with a little practice you’ll be flipping them like a pro in no time! Because cottage cheese makes the batter extra tender, the first one might tear or look a little thick. That’s completely okay! Just adjust your heat, give the pan a quick swirl, and you’ll soon be making perfect, golden crepes every time.
These crepes freeze beautifully too. Simply fold them into quarters, freeze them individually on a baking sheet, and then transfer them all together into a large freezer-safe bag. They will stay fresh for up to three months and can be quickly defrosted in the microwave for a high-protein breakfast on the go.
