High-Protein Cottage Cheese Crepes

Some of my favorite breakfast meals are crepes, and this High-Protein Cottage Cheese recipe is the absolute best! I love how easy they are to throw into a blender, creating a silky-smooth batter that makes the crepes melt-in-your-mouth tender. They are just as versatile as classic crepes, so you can dress them up with yogurt or your favorite toppings. I always make a big batch on the weekend so we have a healthy, protein-packed breakfast ready to go during the busy week.

Ingredients
  

  • 2 cups Milk
  • 1 cup Cottage Cheese
  • 1 cup Flour
  • 2 tbsp sugar
  • ½ tsp salt
  • 2 tbsp vegetable oil
For Serving & Decoration
  • Yogurt – as a topping
  • Fresh berries
  • Powdered sugar

Method
 

  1. Add all the ingredients into the blender jar: milk, cottage cheese, sugar, salt, vegetable oil, and flour.
  2. Blend on high speed for 30–45 seconds until the batter is perfectly smooth, creamy, and free of any curd lumps.
  3. Let the batter rest for 5–10 minutes.
  4. Heat a non-stick frying pan over medium heat and lightly grease it with oil for the first crepe.
  5. Pour a ladle of batter and swirl the pan to coat the bottom evenly.
  6. Fry for 1.5–2 minutes until golden, then gently flip with a wide spatula and fry the other side for another 45–60 seconds.
  7. Fold the warm crepes into triangles and arrange them elegantly on a plate.Serve with your favorite topping.
  8. Scatter fresh berries over the top. Lightly dust everything with powdered sugar through a small sieve just before serving.
