Method
- Wash the beets dry with a paper towel.
- Wrap each beetroot individually in foil andbake in a preheated oven at 410F for 1 hour.
- Cool the cooked beets. Peel the beets.
- Cut beets and feta cheese into cubes. Then chopthe green onion.
- In a separate bowl, mix all the ingredients forthe dressing.
- Put the arugula, beets, greenonion, and feta cheese in a serving bowl. Sprinkle pine nuts on top. Drizzlewith dressing.
