Keto Beet Salad with Feta Cheese

Ingredients
  

For the salad
  • 3 medium Beets
  • 3/4 cup Feta cheese
  • 1 cup Arugula lightly packed
  • 1/4 Green onion
  • 2 tbsp Pine nuts toasted, choppedĀ 
For the dressing
  • 1 tbsp Balsamic vinegar
  • 1/8 tbsp Dijon mustard
  • 1/4 tbsp Salt
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Honey

Method
 

  1. Wash the beets dry with a paper towel.
  2. Wrap each beetroot individually in foil andbake in a preheated oven at 410F for 1 hour.
  3. Cool the cooked beets. Peel the beets.
  4. Cut beets and feta cheese into cubes. Then chopthe green onion.
  5. In a separate bowl, mix all the ingredients forthe dressing.
  6. Put the arugula, beets, greenonion, and feta cheese in a serving bowl. Sprinkle pine nuts on top. Drizzlewith dressing.
