Chicken Mango Salad

This salad is easy to prepare and is great for dinner if you feel like something fresh, easy, and healthy.

Ingredients
  

  • 1 Ib chicken breasts
  • 2 tbsp olive oil for cooking
  • 1 cup lettuce leaves
  • ½ cup cherry tomatoes
  • ½ purple onion
  • 1 mango
  • ¼ cup pine nuts
  • ¼ tsp salt
  • ¼ tsp pepper
Dressing
  • 1 tbsp Balsamic vinegar
  • ¼ tsp Dijon mustard
  • ¼ tsp salt
  • 2 tbsp olive oil extra virgin
  • 1 tbsp honey

Method
 

  1. Cut chicken breast in half lengthwise, then season with salt and pepper to taste and cook in 2 tsp olive oil over medium-high heat until cooked through (2 min per side).
  2. Remove from pan, cool for 10 minutes, then slice into strips against the grain.
  3. In a deep salad bowl, add chopped lettuce leaves. After that, top with halved cherry tomatoes, diced mango, purple onion, and juicy chicken.
  4. Sprinkle pine nuts on top.
  5. In a separate mixing bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, and salt.
  6. Drizzle dressing over the salad.
