  • 1 lb salmon fish cut into bite-sized pieces
  • 1 onion finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot sliced
  • 2 potatoes
  • 1 celery stalk chopped
  • 4 cups fish or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • ¼ cup rice noodles
  • Fresh parsley chopped (for garnish)

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, bell pepper, potatoes, carrot, and celery. Sauté until the vegetables are softened.
  • Add thefish or vegetable broth and cook for about 10-15.
  • Season thesoup with salt and pepper to taste. Adjust the seasoning according to yourpreference.
  • Gently add the shrimp and fish to the simmering soup. Cook for an additional 5-7 minutes or until the seafood is cooked through. Be careful not to overcook the seafood, as it can become tough.
  • After that,add rice noodles and cook 1-2 minutes.
