So fresh and simple, this arugula salad with, avocado,parmesan, and cherry tomatoes is the perfect accompaniment to most meals.

Ingredients
  

  • 2 cups arugula
  • ½ cup cherry tomatoes
  • 1 avocado
  • ½ cup parmesan

For dressing

  • 3 tsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp honey
  • salt and pepper to taste

Instructions
 

  • In a small bowl, whisk together olive oil, balsamic vinegar, and honey to make a dressing. Add salt and pepper to taste. Set aside.
  • In a large bowl, add arugula,then top with sliced parmesan, cherry tomatoes, and sliced avocado.
  • Serve this keto salad with dressing on the side.
  • Transfer the tossed salad to a platter. Add the avocado slices last minute to keep them from browning. Enjoy!
