- 2 cups arugula
- ½ cup cherry tomatoes
- 1 avocado
- ½ cup parmesan
For dressing
- 3 tsp olive oil
- 1 tsp balsamic vinegar
- 1 tsp honey
- salt and pepper to taste
In a small bowl, whisk together olive oil, balsamic vinegar, and honey to make a dressing. Add salt and pepper to taste. Set aside.
In a large bowl, add arugula,then top with sliced parmesan, cherry tomatoes, and sliced avocado.
Serve this keto salad with dressing on the side.
Transfer the tossed salad to a platter. Add the avocado slices last minute to keep them from browning. Enjoy!
