Method
- Press the strawberry puree through a fine-mesh sieve to remove all the liquid. This will take some time.
- Combine milk, cream, sugar, and gelatin, and let bloom for 5 min. Heat the mixture and stir to dissolve the gelatin and sugar.
- Add the pureed strawberries and blend until combined.
- Divide the mixture evenly between ramekins and refrigerate for at least 2 hours. Or you can leave them over night.
