Ingredients
  

  • 1 pound strawberries
  • ½ cup whole milk
  • 1 tsp gelatin powder
  • cup brown sugar
  • 1 cup heavy cream

Method
 

  1. Press the strawberry puree through a fine-mesh sieve to remove all the liquid. This will take some time.
  2. Combine milk, cream, sugar, and gelatin, and let bloom for 5 min.
     Heat the mixture and stir to dissolve the gelatin and sugar.
  3. Add the pureed strawberries and blend until combined.
  4. Divide the mixture evenly between ramekins and refrigerate for at least 2 hours. Or you can leave them over night.
