Ingredients
  

  • 4 cups cubed seedless watermelon
  • ½ cup crumbled feta cheese
  • 2 tbsp balsamic glaze
  • 2 tbsp chopped fresh mint
  • ¼ cup pine nuts
  • salt to taste

Method
 

  1. First, you cut the melon into cubes. Place it in a large bowl for serving. 
  2. Then crumble the feta cheese over the watermelon. I recommend a block of goat’s milk feta. It’s the best!
  3. After that comes a generous drizzle of balsamic glaze. You can find a bottle of balsamic glaze near the balsamic vinegar or in the produce section.
  4. Finish the salad off with a sprinkling of chopped fresh mint leaves, pine nuts, and salt to taste.
