  2. Cut in Butter: Add the chilled butterpieces and use a pastry cutter or your fingers to blend the butter into theflour mixture until it resembles coarse crumbs.
  3. Add Water: Gradually add the ice water, one tablespoon at a time, mixing just until the dough comes together. Be careful not to over mix.
  4. Form Dough: Gather the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
For the Filling andAssembly:
  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Peaches:  Slice the peaches.
  3. Roll Out Dough: On a parchment paper roll out the chilled dough into a rough circle about 12 inches in diameter. Transfer the rolled-out dough to the prepared baking sheet.
  4. Assemble Galette: Spread the cream cheese on the dough. Arrange the sliced peach over the cream cheese center of the dough, leaving about a 2-inch border around the edges. Sprinkle peaches with sugar. Fold the edges of the dough over the peaches, overlapping as needed to create a rustic look.
  5. Brush and Sprinkle: Brush the folded edges of the dough with the beaten egg. Sprinkle the edges with sugar if desired. This Peach Galette with homemade dough is a delightful and rustic dessert that showcases the sweetness of fresh peaches with a flaky, buttery crust.
  6. Bake: Bake the galette in the preheated oven for 40-45 minutes, or until the crust is golden brown and the peaches are tender and bubbly.
  7. Cool and Serve: Allow the galette to cool slightly before slicing and serving. Enjoy it warm or at room temperature, optionally with a scoop of vanilla ice cream and dust with powdered sugar before serving.
