In a bowl, combine cottage cheese, egg, sugar, vanilla sugar, and a pinch of salt. Mix well until smooth.
Add flour and mix until you get a soft, slightly sticky dough.
Lightly flour your work surface. Form the dough into a long log .
Slice the log into small, even pieces.
Roll each piece lightly in flour and flatten into small round discs.
Heat a pan over medium heat with a little oil or butter. Place the Cottage Cheese Pancakes in the pan.
Fry for about 3–4 minutes on each side until they become golden brown and crispy.
Once cooked, transfer the Cottage Cheese Pancakes to a plate lined with paper towels to absorb any excess oil.
Transfer to a plate and serve warm with fresh strawberries, sour cream, jam, or honey.
