Ingredients
  

  • 2 eggs hard-boiled
  • 1 cup fresh arugula
  • 4 cherry tomatoes
  • ΒΌ cup fresh pineapple
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp grainy mustard
  • Salt and black pepper to taste

Method
 

  1. In a large bowl, combine arugula, cherry tomatoes, and pineapple.
  2. Add the boiled eggs, sliced into wedges.
  3. In another bowl, mix olive oil, balsamic vinegar, whole grain mustard, salt, and pepper.
  4. Mix well and pour over the salad.
  5. Serve immediately and enjoy!
