Ingredients
  

  • 2 ripe peaches sliced
  • 2 cups fresh arugula
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped walnuts
  • 1 tbsp olive oil
For the Dressing:
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar or honey balsamic
  • 1 tsp honey
  • Salt and pepper to taste

Method
 

  1. Grill the peaches: Brush peach slices lightly with olive oil. Heat a grill pan or outdoor grill over medium-high heat. Grill peaches for 1–2 minutes on each side until grill marks appear.
  2. Assemble the salad: On a large plate, arrange the arugula. Top with grilled peaches, crumbled feta, and chopped walnuts.
  3. Make the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
