Method
Prepare the filling:
- Slice the cooked chicken breast into strips.
- Julienne the carrot and cucumber.
- Wash and dry the herbs.
Soften the rice paper:
- Fill a large bowl or plate with warm water.
- Dip one rice paper sheet into the water for about 5–7 seconds, just until it softens but doesn’t tear.
- Place it flat on a damp plate or cutting board.
Assemble the rolls:
- In the center of the softened rice paper, place a few strips of carrot, cucumber, herbs, and chicken.
- Drizzle about 1 teaspoon of sauce on top.
- Fold the bottom edge over the filling, then fold in the sides, and roll it up tightly from the bottom like a burrito.
- Repeat with remaining ingredients.
- Serve immediately while fresh, with extra dipping sauce on the side if desired.
