Fresh Chicken Rice Paper Rolls

Ingredients
  

  • 4 rice paper sheets
  • 1 chicken breast (boiled or baked)
  • 1 cucumber
  • 1 carrot
  • Fresh parsley
  • creamy garlic sauce or Caesar dressing

Method
 

Prepare the filling:
  1. Slice the cooked chicken breast into strips.
  2. Julienne the carrot and cucumber.
  3. Wash and dry the herbs.
Soften the rice paper:
  1. Fill a large bowl or plate with warm water.
  2. Dip one rice paper sheet into the water for about 5–7 seconds, just until it softens but doesn’t tear.
  3. Place it flat on a damp plate or cutting board.
Assemble the rolls:
  1. In the center of the softened rice paper, place a few strips of carrot, cucumber, herbs, and chicken.
  2. Drizzle about 1 teaspoon of sauce on top.
  3. Fold the bottom edge over the filling, then fold in the sides, and roll it up tightly from the bottom like a burrito.
  4. Repeat with remaining ingredients.
  5. Serve immediately while fresh, with extra dipping sauce on the side if desired.
