- Drain the pineapple rings and pat them dry with paper towels.
- Brush both sides lightly with melted butter.Sprinkle with brown sugar and cinnamon.
- Heat a grill pan over medium-high heat.
- Grill the pineapple rings for 2–3 minutes per side until caramelized and lightly charred.
- Serve warm with fresh mint and a scoop of ice cream.
