Ingredients
  

  • 1 lb carrots, peeled and cut into sticks (you can use rainbow or regular carrots)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup (optional for sweetness)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

  1. Set your oven to 400°F (200°C).
  2. In a large bowl, toss the carrot sticks with olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper until they're well-coated.
  3. Spread the carrots in a single layer on a baking sheet lined.
  4. Place the baking sheet in the oven and roast the carrots for 25-30 minutes, stirring once halfway through, until they are caramelized and tender.
  5. Serve warm as a side dish.
