Ingredients
  

  • 2 eggs hard-boiled
  • 1 cup fresh arugula
  • 4 cherry tomatoes
  • ΒΌ cup fresh pineapple
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp grainy mustard
  • Salt and black pepper to taste

Instructions
 

  • In a large bowl, combine arugula, cherry tomatoes, and pineapple.
  • Add the boiled eggs, sliced into wedges.
  • In another bowl, mix olive oil, balsamic vinegar, whole grain mustard, salt, and pepper.
  • Mix well and pour over the salad.
  • Serve immediately and enjoy!
