Ingredients
  

  • cups (220g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • tsp baking powder
  • tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) hot coffee (or hot water)

  • 8 oz (226g) cream cheese, softened
  • 1 cup (240ml) heavy whipping cream, cold
  • ½ cup (60g) powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  • Mix dry ingredients: In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add wet ingredients: Mix in eggs, milk, oil, and vanilla. Beat until well combined.
  • Addhot coffee: Slowly pour in the hot coffee (or water) whilestirring. The batter will be thin, but this helps make the cake moist.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Make theWhipped Cream Cheese Frosting

  • Beat the cream cheese until smooth.
  • In a separate bowl, whip the cold heavy cream until soft peaks form.
  • Add powdered sugar and vanilla to the cream cheese and beat until fluffy.
  • Gently fold in the whipped cream until combined. Be careful not to overmix.
  • Spread frosting on one cake layer, place the second layer on top, and frost the entire cake.
  • Garnish with grated chocolate and cream as desired.
  • Chill for 2 hours before serving for the best texture.
