Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 10 mushrooms
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder (or minced garlic)
  • 1 tsp paprika
  • 1 tsp dried oregano (or Italian seasoning)
  • ½ tsp dried oregano (or Italian seasoning)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes

Instructions
 

  • Prep Skewers: If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
  • MarinateChicken: In a bowl, mix olive oil, lemon juice, garlic,paprika, oregano, salt, pepper, and red pepper flakes. Add chicken cubes andtoss to coat. Let marinate for at least 15 minutes (or up to 1 hour for moreflavor).
  • Assemble Kabobs: Thread the chicken, bell peppers, mushrooms, and onion onto the skewers, alternating pieces.
  • Preheat Air Fryer: Set it to 375°F (190°C) for 3-5 minutes.
  • Cook: Place skewers in the air fryer basket in a single layer. Cook for 10-12 minutes, flipping halfway, until chicken is golden brown and reaches an internal temperature of 165°F (75°C).
  • Serve: Let rest for 2 minutes, then enjoy with rice, salad, or a yogurt dipping sauce!
