Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp  fine sea salt
  • 3 large eggs, room temperature
  • 1 cup extra light olive oil
  • 15 oz pumpkin puree

Instructions
 

  • Preheat oven to 350˚F. Line a bread pan with baking paper.
  • In a large mixing bowl,whisk together the dry ingredients: flour, sugar, baking soda, baking powder,cinnamon, and salt.
  • In another bowl, whisk together the wet ingredients: eggs, oil, and pumpkin puree.
  • Pour the wet ingredients into the dry ingredients and whisk until the mixture is smooth and well combined.
  • Pour the batter into the prepared pan.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, let cool in the pan for 15-20 minutes. Then, transfer to a wire rack to cool completely before slicing and serving.
