Ingredients
  

  • 2 Zucchini
  • ¼ cup Parmesan cheese grated
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • parsley for garnish

Instructions
 

  • Preheat the oven to 425F and lining a baking sheet with parchment paper.
  • Cut the zucchini lengthwise into quarters and place them in a bowl.
  • Drizzle olive oil over the zucchini and add minced garlic. Use your hands to evenly coat the zucchini with the garlic and olive oil.
  • Arrange the coated zucchini on the prepared baking sheet in a single layer.
  • Sprinkle salt, pepper, and Parmesan cheese over them.
  • Place in the oven and bake for 15 minutes until they are tender.
  • Once done, garnish withparsley before serving warm.
  • For an extra touch of flavor, you can also sprinkle an additional tablespoon of Parmesan cheese right before serving.
