High-Protein Cottage Cheese Pancakes

Ingredients
  

  • 2 cups cottage cheese dry
  • 2 eggs
  • 2 tbsp sugar
  • 1 tsp vanilla sugar
  • 3 tbsp flour (plus extra for shaping)
  • 2 tbsp Oil or butter for frying

Instructions
 

  • In a bowl, combine cottage cheese, egg, sugar, vanilla sugar, and a pinch of salt. Mix well until smooth.
  • Add flour and mix until you get a soft, slightly sticky dough.
  • Lightly flour your work surface. Form the dough into a long log .
  • Slice the log into small, even pieces.
  • Roll each piece lightly in flour and flatten into small round discs.
  • Heat a pan over medium heat with a little oil or butter. Place the Cottage Cheese Pancakes in the pan.
  • Fry for about 3–4 minutes on each side until they become golden brown and crispy.
  • Once cooked, transfer the Cottage Cheese Pancakes to a plate lined with paper towels to absorb any excess oil.
  • Transfer to a plate and serve warm with fresh strawberries, sour cream, jam, or honey.
