Healthy Spring Salad with Cucumbers and Radishes

When the weather starts to warm up, our bodies naturally crave lighter, fresher meals—and nothing says spring quite like a crisp, vibrant salad. This healthy spring salad is a celebration of simple, seasonal ingredients: crunchy cucumbers, peppery radishes, and fragrant fresh herbs, all brought together with a light, refreshing dressing.

- 4 small cucumbers thinly sliced
- 8 radishes thinly sliced
- 2-3 green onions chopped
- 2 tbsp fresh dill chopped
Dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice (or mild vinegar)
- Salt, to taste
Wash all vegetables thoroughly.
Slice the cucumbers and radishes into thin rounds.
Chop the green onions, and dill.
In a large bowl, combine all the vegetables and herbs.
In a small bowl, whisk together olive oil, lemon juice and salt.
Pour the dressing over the salad and toss gently.
Let it sit for 5–10 minutes before serving to allow the flavors to blend.
