This healthy spring salad is a celebration of simple, seasonal ingredients: crunchy cucumbers, peppery radishes, and fragrant fresh herbs, all brought together with a light, refreshing dressing.

Ingredients
  

  • 4 small cucumbers thinly sliced
  • 8 radishes thinly sliced
  • 2-3 green onions chopped
  • 2 tbsp fresh dill chopped

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lemon juice (or mild vinegar)
  • Salt, to taste

Instructions
 

  • Wash all vegetables thoroughly.
  • Slice the cucumbers and radishes into thin rounds.
  • Chop the green onions, and dill.
  • In a large bowl, combine all the vegetables and herbs.
  • In a small bowl, whisk together olive oil, lemon juice and salt.
  • Pour the dressing over the salad and toss gently.
  • Let it sit for 5–10 minutes before serving to allow the flavors to blend.
