- 1 cup rolled oats (ground into oat flour)
- 3 eggs
- ½ cup plain yogurt or kefir
- 2 tbsp sugar
- 2 tbsp vegetable oil
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
- 1 cup mixed berries (blueberries, raspberries, cherries – fresh or frozen)
- Pinch of salt
Preheat the oven to 180°C / 350°F.
Line or grease a round baking pan.
Grind the oats in a blender or food processor until you get a fine flour.
In a bowl, whisk eggs with sugar until slightly fluffy.
Add yogurt, oil, vanilla, and salt. Mix well.
Stir in oat flour, baking powder, and baking soda until smooth.
Gently fold in the berries.
Pour the batter into the pan and spread evenly.
Bake for 35–40 minutes, until golden and a toothpick comes out clean.
Let cool before slicing.
