Ingredients
  

  • 1 cup rolled oats (ground into oat flour)
  • 3 eggs
  • ½ cup plain yogurt or kefir
  • 2 tbsp sugar
  • 2 tbsp vegetable oil
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, cherries – fresh or frozen)
  • Pinch of salt

Instructions
 

  • Preheat the oven to 180°C / 350°F.
  • Line or grease a round baking pan.
  • Grind the oats in a blender or food processor until you get a fine flour.
  • In a bowl, whisk eggs with sugar until slightly fluffy.
  • Add yogurt, oil, vanilla, and salt. Mix well.
  • Stir in oat flour, baking powder, and baking soda until smooth.
  • Gently fold in the berries.
  • Pour the batter into the pan and spread evenly.
  • Bake for 35–40 minutes, until golden and a toothpick comes out clean.
  • Let cool before slicing.
