Ingredients
  

Ingredients for the meatballs

  • 1 lb Ground Meat(pork and ground beef)
  • 1 Egg
  • 0,5 Onion
  • cup Parsley minced
  • ¼ cup Breadcrumbs
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 3 tbsp olive oil

Ingredients for the soup

  • 3 Potatoes
  • 1 Carrot
  • 1 Onion
  • 4 cups Homemade Chicken Broth
  • 6 cups water
  • ½ tsp salt
  • 3 tbsp olive oil
  • ¼ cup rice

Instructions
 

Make Meatballs

  • Place all meatball ingredients in a mixing bowl and mix well with your hands. Then, roll the meat into 1-inch balls.
  • Heat olive oil over medium heat in a pan. Brown the meatballs for 2-3 minutes.The inside of meatballs will finish cooking in the soup.
  • Remove the meatballs and set them aside.

Cook Soup

  • Heat olive oil over medium heat in a large pot, and then add the onions, carrots, and potatoes. Cover and let the veggies sweat, stirring occasionally for 5 minutes.
  • Add the chicken broth and water. Bring to a boil, and simmer for 15 minutes.
  • Add the meatballs and rice. Cook until rice is cooked through, refer to package for cooking time.
  • Transfer to serving bowls. Garnish with the fresh parsley.
