- 1 lb cod fillets , or whatever fish you want to use
- 2 eggs
- 4 tbsp olive oil
- breadcrumbs
- salt and pepper to taste
Cut the fish into 8-10 equal pieces and pat with a paper towel. Then lightly season with salt and pepper.
Beat the eggs in a bowl. Then, dunk each piece through the beaten eggs and finally press it into the breadcrumbs.
Heat some olive oil in a non-stick pan. After that, fry for a few minutes, until golden brown on both sides. Make sure there is enough space between all pieces, do not stack them!
Let the fish rest for 3-4 minutes after baking.
Serve the crispy fried cod fish sticks with lemon wedges and tartar sauce on the side, along with coleslaw and fries or roasted potatoes.
