Oven Roasted Eggplant

This easy oven-roasted eggplant recipe is one of the perfect healthy addition to just about any meal.

Ingredients
  

  • 2 eggplants
  • 4 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp oregano

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Wash and slice the eggplant in half.
  • Slice the inner side of the eggplant halves across on a diagonal one way, then slice a cross the eggplant in the opposite direction, making a diamond pattern as shown in the photo below.
  • Arrange eggplant on a baking sheet.
  • Then drizzle them with olive oil and season them with salt, garlic powder, and oregano.
  • Then it's time to roast that eggplant up! It will take about 35-40 minutes.
