Oven Roasted Eggplant

- 2 eggplants
- 4 tbsp olive oil
- ½ tsp salt
- ¼ tsp oregano
Preheat the oven to 400 degrees F.
Wash and slice the eggplant in half.
Slice the inner side of the eggplant halves across on a diagonal one way, then slice a cross the eggplant in the opposite direction, making a diamond pattern as shown in the photo below.
Arrange eggplant on a baking sheet.
Then drizzle them with olive oil and season them with salt, garlic powder, and oregano.
Then it's time to roast that eggplant up! It will take about 35-40 minutes.
